Light and refreshing cucumber sandwiches with creamy herbed cream cheese on your choice of bread, perfect for any gathering.
Ingredients

- 1 large Cucumber, thinly sliced
- 8 oz Cream Cheese, softened
- 2 tbsp Fresh Dill, chopped (or chives/parsley)
- 4 slices Sourdough Bread or Sandwich Bread
- Salt, to taste
- Pepper, to taste
Instructions
- Wash and slice the cucumbers thinly (about 1/8-inch).
- Blend softened cream cheese, dill, salt, and pepper in a mixing bowl until smooth.
- Spread the cream cheese mixture on one side of each slice of bread.
- Layer cucumber slices on half of the cream cheese-covered bread slices.
- Top with the other slices of bread, cream cheese side down.
- Cut the sandwiches into quarters or triangles and serve immediately.
Notes
For an extra touch, remove crusts or use cookie cutters for fun shapes.
