Description

Light and refreshing cucumber sandwiches with creamy herbed cream cheese on your choice of bread, perfect for any gathering.


Ingredients

Scale
  • 1 large Cucumber, thinly sliced
  • 8 oz Cream Cheese, softened
  • 2 tbsp Fresh Dill, chopped (or chives/parsley)
  • 4 slices Sourdough Bread or Sandwich Bread
  • Salt, to taste
  • Pepper, to taste

Instructions

  1. Wash and slice the cucumbers thinly (about 1/8-inch).
  2. Blend softened cream cheese, dill, salt, and pepper in a mixing bowl until smooth.
  3. Spread the cream cheese mixture on one side of each slice of bread.
  4. Layer cucumber slices on half of the cream cheese-covered bread slices.
  5. Top with the other slices of bread, cream cheese side down.
  6. Cut the sandwiches into quarters or triangles and serve immediately.

Notes

For an extra touch, remove crusts or use cookie cutters for fun shapes.
