- 1 lb ground beef
- 1 packet taco seasoning
- 1 cup cherry tomatoes, halved
- 1 cup corn, canned or frozen
- 1 cup black beans, drained and rinsed
- 1/2 cup red bell pepper, diced
- 1 cup shredded cheddar cheese
- 2 cups crushed Doritos
- 1 cup ranch dressing
- 1/4 cup sour cream
- 1 tablespoon lime juice
- Salt and pepper to taste
Instructions
- Cook the elbow macaroni by boiling it in salted water until tender, then drain and rinse with cold water.
- Brown the ground beef in a skillet, drain excess fat, and mix in taco seasoning as per instructions.
- Combine cooked macaroni, seasoned beef, cherry tomatoes, corn, black beans, red bell pepper, and cheddar cheese in a large mixing bowl.
- Make the dressing by whisking together ranch dressing, sour cream, and lime juice in a separate bowl.
- Dress the salad by pouring the ranch dressing over the mixture and tossing to coat evenly.
- Add the crushed Doritos right before serving to maintain their crunch.
