Description

A vibrant and flavorful pasta salad that combines the crunch of Doritos with savory taco-seasoned beef, fresh veggies, and creamy ranch dressing, perfect for summer barbecues.


Ingredients

  • 8 oz elbow macaroni
  • 1 lb ground beef
  • 1 packet taco seasoning
  • 1 cup cherry tomatoes, halved
  • 1 cup corn, canned or frozen
  • 1 cup black beans, drained and rinsed
  • 1/2 cup red bell pepper, diced
  • 1 cup shredded cheddar cheese
  • 2 cups crushed Doritos
  • 1 cup ranch dressing
  • 1/4 cup sour cream
  • 1 tablespoon lime juice
  • Salt and pepper to taste

Instructions

  1. Cook the elbow macaroni by boiling it in salted water until tender, then drain and rinse with cold water.
  2. Brown the ground beef in a skillet, drain excess fat, and mix in taco seasoning as per instructions.
  3. Combine cooked macaroni, seasoned beef, cherry tomatoes, corn, black beans, red bell pepper, and cheddar cheese in a large mixing bowl.
  4. Make the dressing by whisking together ranch dressing, sour cream, and lime juice in a separate bowl.
  5. Dress the salad by pouring the ranch dressing over the mixture and tossing to coat evenly.
  6. Add the crushed Doritos right before serving to maintain their crunch.
