Description

Warm, fluffy fritters with juicy peaches and a sweet glaze, perfect for summer indulgence.

Ingredients

Scale
  • 2 cups all-purpose flour
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 1/4 cup sugar
  • 1 cup milk
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1 cup peaches, diced
  • Oil for frying
  • 1 cup powdered sugar (for glaze)
  • 2 tablespoons milk (for glaze)
  • 1/2 teaspoon vanilla extract (for glaze)

Instructions

  1. Whisk together the flour, baking powder, salt, and sugar until well combined.
  2. Whisk together the milk, egg, and vanilla extract until smooth in another bowl.
  3. Fold the wet ingredients into the dry ingredients, mixing until just combined.
  4. Carefully fold in the diced peaches until evenly distributed.
  5. Heat oil in a deep fryer or large pot to 350°F (175°C).
  6. Drop generous spoonfuls of batter into the hot oil, frying until golden brown, about 3-4 minutes.
  7. Transfer fritters to a paper towel-lined plate to drain.
  8. Combine powdered sugar, milk, and vanilla extract for the glaze and mix until smooth.
  9. Drizzle glaze over warm fritters before serving.

Notes

For best texture, fry fritters fresh. Store leftovers in an airtight container for up to 2 days or freeze for up to a month.
