- Zest from 2 lemons
- ½ cup lemon curd (from Homemade Lemon Curd)
- 1 ½ cups confectioners’ sugar
- 2 cups heavy cream (well-chilled)
- 6 cups blueberries
- ½ cup blueberry preserves
- ⅓ cup limoncello (for soaking the cake)
- Mint leaves and sliced lemons (for garnish)
- 1 recipe Lemon Pound Cake (or store-bought cake/angel food cake)
- 1 recipe Homemade Lemon Curd (or store-bought lemon curd)
Instructions
- Preheat your oven as per the Lemon Pound Cake recipe.
- Prepare your cake batter according to the recipe, allowing it to bake until golden brown and a toothpick comes out clean. Let the cake cool completely before slicing into layers.
- While your cake cools, whip up a batch of Homemade Lemon Curd or open your store-bought jar. Stir it until smooth and set aside.
- In a large bowl, blend the softened cream cheese with the vanilla extract, limoncello, lemon zest, and confectioners’ sugar using your mixer until smooth.
- In a separate chilled bowl, whip the heavy cream until stiff peaks form. Gently fold the whipped cream into the cream cheese mixture until fully incorporated, creating a heavenly filling.
- Slice your lemon cake into layers.
- Start layering the trifle: Begin with a layer of cake soaked in limoncello, followed by a generous spoonful of blueberry preserves.
- Add a layer of your luscious cream filling and top with blueberries.
- Repeat the layers until you reach the top of your trifle dish. Finish with whipped cream and a sprinkle of fresh blueberries for a beautiful appearance.
