Description

A delightful summer dessert featuring layers of lemon cake, blueberry preserves, and cream cheese filling.


Ingredients

  • 1 ½ tsp vanilla extract
  • 1 tbsp limoncello
  • Zest from 2 lemons
  • ½ cup lemon curd (from Homemade Lemon Curd)
  • 1 ½ cups confectioners’ sugar
  • 2 cups heavy cream (well-chilled)
  • 6 cups blueberries
  • ½ cup blueberry preserves
  • ⅓ cup limoncello (for soaking the cake)
  • Mint leaves and sliced lemons (for garnish)
  • 1 recipe Lemon Pound Cake (or store-bought cake/angel food cake)
  • 1 recipe Homemade Lemon Curd (or store-bought lemon curd)

Instructions

  1. Preheat your oven as per the Lemon Pound Cake recipe.
  2. Prepare your cake batter according to the recipe, allowing it to bake until golden brown and a toothpick comes out clean. Let the cake cool completely before slicing into layers.
  3. While your cake cools, whip up a batch of Homemade Lemon Curd or open your store-bought jar. Stir it until smooth and set aside.
  4. In a large bowl, blend the softened cream cheese with the vanilla extract, limoncello, lemon zest, and confectioners’ sugar using your mixer until smooth.
  5. In a separate chilled bowl, whip the heavy cream until stiff peaks form. Gently fold the whipped cream into the cream cheese mixture until fully incorporated, creating a heavenly filling.
  6. Slice your lemon cake into layers.
  7. Start layering the trifle: Begin with a layer of cake soaked in limoncello, followed by a generous spoonful of blueberry preserves.
  8. Add a layer of your luscious cream filling and top with blueberries.
  9. Repeat the layers until you reach the top of your trifle dish. Finish with whipped cream and a sprinkle of fresh blueberries for a beautiful appearance.
