Description

A delightful mango Swiss roll cake with a light, airy sponge and a luscious mascarpone filling, perfect for warm days and special occasions.


Ingredients

  • 6 large eggs
  • 1 cup white granulated sugar
  • 1 tsp vanilla extract
  • 1 cup all-purpose flour
  • 1 tsp baking powder
  • 1/3 cup confectioner’s sugar (for dusting)
  • 3 large mangoes
  • 1/3 cup mango nectar or juice
  • 12 oz mascarpone or cream cheese
  • 1 tsp additional vanilla extract
  • 2 tbsp mango puree
  • 1 cup confectioner’s sugar (for filling)
  • 2 cups heavy cream (very cold)
  • 1 tbsp lemon juice
  • Small bunch of fresh mint leaves
  • Orange food coloring (optional)

Instructions

  1. Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper and grease it lightly.
  2. Whisk eggs and granulated sugar in a large bowl until fluffy and pale, about 5-7 minutes.
  3. Fold in vanilla extract gently.
  4. Combine flour and baking powder in another bowl. Gradually fold dry ingredients into the egg mixture.
  5. Pour batter onto the prepared baking sheet, spreading it evenly. Bake for 10-12 minutes until lightly golden.
  6. Invert the cake onto a clean kitchen towel dusted with confectioner’s sugar and roll it up with the towel inside. Allow to cool completely.
  7. Blend mango, nectar or juice, and lemon juice for the filling until smooth.
  8. Fold in diced mango.
  9. Whip heavy cream in a chilled bowl until soft peaks form.
  10. Add confectioner’s sugar gradually and continue whipping.
  11. Fold in mascarpone, vanilla extract, and mango puree until smooth.
  12. Unroll the cooled sponge and spread the mascarpone whipped cream and mango filling evenly on it.
  13. Roll the cake back up without the towel and refrigerate for at least an hour to set.
  14. Slice the third mango thinly to create roses for decoration.

Notes

Make-Ahead Tips: The sponge can be made a day in advance. Keep it wrapped to maintain freshness.
