Description

Deliciously wholesome muffins bursting with the flavors of carrots, oats, and warm spices, perfect for breakfast or a snack.


Ingredients

  • 1 cup rolled oats
  • 1 cup grated carrots
  • 1/2 cup all-purpose flour
  • 1/2 cup brown sugar
  • 1/4 cup maple syrup or honey
  • 1/2 cup milk (or dairy-free alternative)
  • 1/2 cup vegetable oil or melted coconut oil
  • 2 eggs
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 1 teaspoon cinnamon
  • 1/2 teaspoon salt
  • 1/2 cup raisins (optional)

Instructions

  1. Preheat your oven to 350°F (175°C) and prepare your muffin tin by greasing it lightly or lining it with muffin liners.
  2. Combine the rolled oats, grated carrots, flour, brown sugar, baking powder, baking soda, cinnamon, and salt in a large mixing bowl.
  3. Mix the milk, oil, eggs, and maple syrup or honey in a separate bowl until well combined.
  4. Bring the wet ingredients into the dry ingredients, mixing gently until just combined. If using, fold in the raisins.
  5. Fill muffin cups about three-quarters full with the batter.
  6. Bake for 18-20 minutes, or until a toothpick inserted comes out clean.
  7. Cool slightly before transferring to a wire rack.

Notes

You can make the batter in advance and store it in the fridge overnight for fresh muffins in the morning.
