- 1 cup rolled oats
- 1 cup grated carrots
- 1/2 cup all-purpose flour
- 1/2 cup brown sugar
- 1/4 cup maple syrup or honey
- 1/2 cup milk (or dairy-free alternative)
- 1/2 cup vegetable oil or melted coconut oil
- 2 eggs
- 1 teaspoon baking powder
- 1 teaspoon baking soda
- 1 teaspoon cinnamon
- 1/2 teaspoon salt
- 1/2 cup raisins (optional)
Instructions
- Preheat your oven to 350°F (175°C) and prepare your muffin tin by greasing it lightly or lining it with muffin liners.
- Combine the rolled oats, grated carrots, flour, brown sugar, baking powder, baking soda, cinnamon, and salt in a large mixing bowl.
- Mix the milk, oil, eggs, and maple syrup or honey in a separate bowl until well combined.
- Bring the wet ingredients into the dry ingredients, mixing gently until just combined. If using, fold in the raisins.
- Fill muffin cups about three-quarters full with the batter.
- Bake for 18-20 minutes, or until a toothpick inserted comes out clean.
- Cool slightly before transferring to a wire rack.
Notes
You can make the batter in advance and store it in the fridge overnight for fresh muffins in the morning.
