- 2 pounds baby potatoes
- 4 slices of bacon, chopped
- 1 packet ranch seasoning mix
- 1 cup shredded cheddar cheese
- 2 tablespoons olive oil
- Salt and pepper to taste
- Fresh parsley for garnish (optional)
Instructions
- Preheat the grill to medium-high heat.
- Combine the baby potatoes, chopped bacon, ranch seasoning, olive oil, salt, and pepper in a large bowl and toss until evenly coated.
- Cut large pieces of aluminum foil and place an equal amount of the potato mixture in the center of each piece.
- Fold the foil over the potatoes to create a sealed packet, crimping edges well.
- Place the foil packets on the grill and cook for about 20-25 minutes or until the potatoes are tender.
- Open the packets, sprinkle with cheddar cheese, and close them again for a few minutes to melt the cheese.
- Garnish with fresh parsley if desired, and serve warm.
Notes
You can prep the potato mixture a day ahead and store it in the fridge. Use alternative vegetables or spices for customization.
