Description

Delightful grilled potatoes with ranch seasoning, bacon, and cheddar cheese cooked in foil packets for a perfect side dish.


Ingredients

  • 2 pounds baby potatoes
  • 4 slices of bacon, chopped
  • 1 packet ranch seasoning mix
  • 1 cup shredded cheddar cheese
  • 2 tablespoons olive oil
  • Salt and pepper to taste
  • Fresh parsley for garnish (optional)

Instructions

  1. Preheat the grill to medium-high heat.
  2. Combine the baby potatoes, chopped bacon, ranch seasoning, olive oil, salt, and pepper in a large bowl and toss until evenly coated.
  3. Cut large pieces of aluminum foil and place an equal amount of the potato mixture in the center of each piece.
  4. Fold the foil over the potatoes to create a sealed packet, crimping edges well.
  5. Place the foil packets on the grill and cook for about 20-25 minutes or until the potatoes are tender.
  6. Open the packets, sprinkle with cheddar cheese, and close them again for a few minutes to melt the cheese.
  7. Garnish with fresh parsley if desired, and serve warm.

Notes

You can prep the potato mixture a day ahead and store it in the fridge. Use alternative vegetables or spices for customization.
