Description

A refreshing medley of quinoa, juicy cherry tomatoes, creamy mozzarella, and fragrant basil, drizzled with a silky balsamic dressing.


Ingredients

  • 1 cup quinoa
  • 2 cups water
  • 1 cup cherry tomatoes, halved
  • 1 cup mozzarella balls, halved
  • 1/2 cup fresh basil leaves, chopped
  • 1/4 cup olive oil
  • 2 tablespoons balsamic vinegar
  • Salt and pepper to taste

Instructions

  1. Rinse the quinoa: Place the quinoa in a fine-mesh strainer and rinse under cold water to remove its natural coating.
  2. Cook the quinoa: In a medium saucepan, combine rinsed quinoa and water. Bring to a boil, then reduce the heat to low and cover. Simmer for about 15 minutes until fluffy.
  3. Cool the quinoa: Transfer to a large bowl or spread on a tray to cool.
  4. Combine the ingredients: Fold in the cherry tomatoes, mozzarella, and basil.
  5. Whisk the dressing: In a small bowl, whisk together olive oil, balsamic vinegar, salt, and pepper.
  6. Dress the salad: Drizzle the dressing over the salad mixture and toss gently.
  7. Serve or refrigerate: Enjoy immediately or refrigerate for up to five hours.

Notes

Make-ahead by preparing quinoa a day in advance. It can be served cold for best flavor.
