- 2 cups water
- 1 cup cherry tomatoes, halved
- 1 cup mozzarella balls, halved
- 1/2 cup fresh basil leaves, chopped
- 1/4 cup olive oil
- 2 tablespoons balsamic vinegar
- Salt and pepper to taste
Instructions
- Rinse the quinoa: Place the quinoa in a fine-mesh strainer and rinse under cold water to remove its natural coating.
- Cook the quinoa: In a medium saucepan, combine rinsed quinoa and water. Bring to a boil, then reduce the heat to low and cover. Simmer for about 15 minutes until fluffy.
- Cool the quinoa: Transfer to a large bowl or spread on a tray to cool.
- Combine the ingredients: Fold in the cherry tomatoes, mozzarella, and basil.
- Whisk the dressing: In a small bowl, whisk together olive oil, balsamic vinegar, salt, and pepper.
- Dress the salad: Drizzle the dressing over the salad mixture and toss gently.
- Serve or refrigerate: Enjoy immediately or refrigerate for up to five hours.
Notes
Make-ahead by preparing quinoa a day in advance. It can be served cold for best flavor.
