Description

Juicy salmon skewers marinated in garlic and lemon, grilled to perfection and served with a tangy yogurt dipping sauce.


Ingredients

  • 1 lb salmon fillets, cut into 12 inch chunks
  • 3 cloves garlic, minced
  • 1/4 cup freshly squeezed lemon juice
  • 2 tbsp fresh herbs (parsley or dill)
  • 2 tbsp extra virgin olive oil
  • Salt and pepper to taste
  • 1 lemon, thinly sliced
  • 1/2 cup Greek yogurt for dipping

Instructions

  1. Prepare the Marinade: In a large bowl, combine minced garlic, fresh lemon juice, olive oil, chopped herbs, salt, and pepper. Whisk until well blended.
  2. Marinate the Salmon: Cut the salmon into 1-2 inch chunks and add them to the bowl, tossing to ensure each piece is coated in the flavorful marinade. Cover and let it marinate for at least 30 minutes.
  3. Preheat Your Cooking Surface: Get your grill or broiler heating up to medium-high temperature.
  4. Skewer the Ingredients: Thread the marinated salmon chunks and thinly sliced lemons onto the skewers, alternating pieces for presentation.
  5. Cook: Place the skewers on the grill or under the broiler. Cook for about 5-7 minutes on each side, until the salmon is cooked through.
  6. Serve: Remove from heat, and serve hot with a side of garlic yogurt sauce for dipping.

Notes
