- 3 cloves garlic, minced
- 1/4 cup freshly squeezed lemon juice
- 2 tbsp fresh herbs (parsley or dill)
- 2 tbsp extra virgin olive oil
- Salt and pepper to taste
- 1 lemon, thinly sliced
- 1/2 cup Greek yogurt for dipping
Instructions
- Prepare the Marinade: In a large bowl, combine minced garlic, fresh lemon juice, olive oil, chopped herbs, salt, and pepper. Whisk until well blended.
- Marinate the Salmon: Cut the salmon into 1-2 inch chunks and add them to the bowl, tossing to ensure each piece is coated in the flavorful marinade. Cover and let it marinate for at least 30 minutes.
- Preheat Your Cooking Surface: Get your grill or broiler heating up to medium-high temperature.
- Skewer the Ingredients: Thread the marinated salmon chunks and thinly sliced lemons onto the skewers, alternating pieces for presentation.
- Cook: Place the skewers on the grill or under the broiler. Cook for about 5-7 minutes on each side, until the salmon is cooked through.
- Serve: Remove from heat, and serve hot with a side of garlic yogurt sauce for dipping.
