A delightful and easy appetizer featuring sautéed zucchini, heirloom tomatoes, and a creamy garlic spread on toasted baguette slices.

- 1 large green zucchini
- 2 to 3 tbsp cooking oil (olive or avocado oil)
- Salt and black pepper to taste
- 1 large heirloom tomato
- 1/3 cup mayonnaise
- 2 to 4 cloves of garlic
- 2 tbsp fresh dill (chopped)
- 1/2 French baguette
Instructions
- Wash the zucchini under cool water and pat it dry.
- Slice the zucchini into thin rounds, about ¼ inch thick.
- Toss the zucchini slices with oil, salt, and pepper to season.
- Heat a skillet over medium-high heat and add the zucchini slices in a single layer.
- Sauté the zucchini for 3-4 minutes on each side until golden and tender, then set aside.
- In a medium mixing bowl, combine the mayonnaise, minced garlic, and dill.
- Stir well until fully incorporated, adjusting seasoning as needed.
- Preheat your oven to 400°F (200°C) if baking the crostini.
- Slice the French baguette into ½ inch thick slices and arrange on a baking sheet.
- Brush each slice lightly with oil, then bake for 5-7 minutes until golden and crispy.
- Spread a layer of garlic mixture on each toasted baguette slice.
- Top with sautéed zucchini rounds and slices of heirloom tomato.
- Serve immediately for the best flavor.
Notes
For a make-ahead option, prepare the spread and sauté the zucchini earlier in the day, but assemble just before serving.
