Description

A delightful and easy appetizer featuring sautéed zucchini, heirloom tomatoes, and a creamy garlic spread on toasted baguette slices.


Ingredients

  • 1 large green zucchini
  • 2 to 3 tbsp cooking oil (olive or avocado oil)
  • Salt and black pepper to taste
  • 1 large heirloom tomato
  • 1/3 cup mayonnaise
  • 2 to 4 cloves of garlic
  • 2 tbsp fresh dill (chopped)
  • 1/2 French baguette

Instructions

  1. Wash the zucchini under cool water and pat it dry.
  2. Slice the zucchini into thin rounds, about ¼ inch thick.
  3. Toss the zucchini slices with oil, salt, and pepper to season.
  4. Heat a skillet over medium-high heat and add the zucchini slices in a single layer.
  5. Sauté the zucchini for 3-4 minutes on each side until golden and tender, then set aside.
  6. In a medium mixing bowl, combine the mayonnaise, minced garlic, and dill.
  7. Stir well until fully incorporated, adjusting seasoning as needed.
  8. Preheat your oven to 400°F (200°C) if baking the crostini.
  9. Slice the French baguette into ½ inch thick slices and arrange on a baking sheet.
  10. Brush each slice lightly with oil, then bake for 5-7 minutes until golden and crispy.
  11. Spread a layer of garlic mixture on each toasted baguette slice.
  12. Top with sautéed zucchini rounds and slices of heirloom tomato.
  13. Serve immediately for the best flavor.

Notes

For a make-ahead option, prepare the spread and sauté the zucchini earlier in the day, but assemble just before serving.
