Description

A delightful medley of marinated chicken, fresh veggies, and fluffy grains that transports you to the Mediterranean.


Ingredients

  • 2 Chicken Breasts
  • 2 tbsp Olive Oil
  • Juice of 1 Lemon
  • 2 cloves Garlic, minced
  • 1 tsp Dried Oregano
  • Salt and Pepper to taste
  • 1 cup Quinoa or Rice
  • 1/2 cup Cherry Tomatoes, halved
  • 1/2 cup Cucumber, diced
  • 1/4 Red Onion, sliced
  • 1/4 cup Fresh Parsley, chopped
  • Tzatziki Sauce for topping
  • Kalamata Olives or Feta Cheese for garnish

Instructions

  1. Marinate the chicken in olive oil, lemon juice, garlic, oregano, salt, and pepper for at least 30 minutes.
  2. Cook the chicken on a grill or skillet for 6-8 minutes per side until fully cooked.
  3. Prepare quinoa or rice according to package instructions.
  4. Chop veggies and mix them with parsley.
  5. Assemble the bowls with quinoa or rice, sliced chicken, and vegetables. Drizzle with tzatziki.
  6. Serve immediately, garnished with olives or feta if desired.
