Description

Delicious Greek Chicken Stuffed Peppers filled with seasoned ground chicken, rice, and feta, embodying Mediterranean flavors.


Ingredients

  • 4 bell peppers (red, yellow, or orange)
  • 1 pound ground chicken
  • 1 cup cooked rice
  • 1 cup crumbled feta cheese
  • 2 cloves garlic, minced
  • 1 teaspoon dried oregano
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 tablespoon olive oil
  • 1/4 cup chopped fresh parsley

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Prepare the peppers: Cut the tops off and remove the seeds.
  3. Sauté the garlic in olive oil over medium heat until fragrant.
  4. Cook the ground chicken with oregano, salt, and pepper, browning thoroughly.
  5. Combine the cooked rice and feta cheese with the chicken mixture.
  6. Stuff the bell peppers with the chicken and rice mixture.
  7. Bake the stuffed peppers for 25-30 minutes covered with foil.
  8. Uncover and bake for an additional 10 minutes.
  9. Garnish with fresh parsley before serving.

Notes

Make-ahead by prepping the filling a day in advance; store in the refrigerator until ready to bake. For a crispy topping, broil the stuffed peppers at the end.
