- 4 bell peppers (red, yellow, or orange)
- 1 pound ground chicken
- 1 cup cooked rice
- 1 cup crumbled feta cheese
- 2 cloves garlic, minced
- 1 teaspoon dried oregano
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 tablespoon olive oil
- 1/4 cup chopped fresh parsley
Instructions
- Preheat the oven to 375°F (190°C).
- Prepare the peppers: Cut the tops off and remove the seeds.
- Sauté the garlic in olive oil over medium heat until fragrant.
- Cook the ground chicken with oregano, salt, and pepper, browning thoroughly.
- Combine the cooked rice and feta cheese with the chicken mixture.
- Stuff the bell peppers with the chicken and rice mixture.
- Bake the stuffed peppers for 25-30 minutes covered with foil.
- Uncover and bake for an additional 10 minutes.
- Garnish with fresh parsley before serving.
