- 1 cup rolled oats
- 2 ripe bananas
- 1 cup Greek yogurt
- 1/2 cup honey or maple syrup
- 1/2 cup chocolate chips
- 1/2 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1 teaspoon vanilla extract
- 1/2 teaspoon cinnamon
- 1/4 teaspoon salt
Instructions
- Preheat your oven to 350°F (175°C) and line a muffin tin with paper liners.
- Mash the bananas in a large bowl until smooth.
- Combine the wet ingredients: Greek yogurt, honey (or maple syrup), and vanilla extract.
- Mix the dry ingredients: rolled oats, baking powder, baking soda, cinnamon, and salt in another bowl.
- Gradually add the dry mix to the wet ingredients, mixing gently until just combined.
- Fold in the chocolate chips.
- Spoon the batter into the prepared muffin tin, filling each cup about two-thirds full.
- Bake for 18-20 minutes, until a toothpick inserted comes out clean.
- Cool for a few minutes before transferring to a wire rack.

These muffins can be stored in an airtight container for up to one week or frozen for up to three months.
