Description

Juicy marinated chicken and vibrant vegetables skewered and grilled to perfection, perfect for summer gatherings.

Ingredients

Scale
  • 1 lb Chicken Breast, cut into bite-sized pieces
  • 1 Zucchini, sliced
  • 1 Bell Pepper, cut into chunks
  • 1 Red Onion, cut into wedges
  • 2 tablespoons Olive Oil
  • 2 tablespoons Lemon Juice
  • 2 cloves Garlic, minced
  • Salt, to taste
  • Pepper, to taste

Instructions

  1. Prepare the Ingredients: Cut the chicken breast, zucchini, bell pepper, and red onion into bite-sized pieces.
  2. Create the Marinade: In a bowl, whisk together olive oil, lemon juice, minced garlic, salt, and pepper.
  3. Marinate: Add chicken and vegetables to the marinade, toss, and let sit for at least 30 minutes.
  4. Preheat the Grill: Heat your grill to medium-high for optimal cooking.
  5. Skewer: Thread the marinated chicken and vegetables onto skewers, alternating for a beautiful presentation.
  6. Grill: Cook for 10-15 minutes, turning occasionally until the chicken is cooked through and veggies are tender.
  7. Serve Hot: Remove from the grill and enjoy with your favorite sides.

Notes

For best flavor, marinate chicken and veggies overnight. If grilling isn’t an option, use an air fryer at 400°F for 8-10 minutes.
