Description

Juicy grilled turkey meatballs flavored with garlic and pistachios, served with a refreshing yogurt sauce.


Ingredients

  • 1 lb ground turkey (93% lean recommended)
  • 1 small sweet onion, finely chopped
  • 1 large egg
  • 67 medium garlic cloves, minced
  • 1/3 cup shelled pistachios, coarsely chopped
  • 1/3 cup plain breadcrumbs
  • 1/2 cup fresh dill, chopped
  • 1/2 cup fresh mint, chopped
  • 1 1/2 tsp sea salt
  • Freshly ground black pepper, to taste
  • 1 tsp ground coriander
  • 1/2 tsp ground cumin
  • 1 tbsp avocado or olive oil (for grilling)
  • 1 cup plain yogurt
  • 34 medium garlic cloves, minced (for sauce)
  • 2 tbsp chopped fresh mint (for sauce)
  • 2 tbsp chopped fresh dill (for sauce)
  • Zest from 1 large lemon
  • Salt and pepper, to taste (for sauce)

Instructions

  1. In a large mixing bowl, combine the ground turkey, finely chopped onion, minced garlic, egg, crushed pistachios, breadcrumbs, dill, mint, sea salt, black pepper, coriander, and cumin. Mix with your hands until well-blended, being careful not to overwork the mixture.
  2. Shape the mixture into roughly 1-inch meatballs for even cooking.
  3. Preheat your grill or grill pan over medium heat and lightly oil the grates with avocado or olive oil to prevent sticking.
  4. Place the meatballs on the grill, leaving space between each. Grill for about 5-7 minutes per side until they reach a golden-brown crust and an internal temperature of 165°F.
  5. While the meatballs grill, mix the yogurt, minced garlic, chopped mint, chopped dill, lemon zest, and seasoning in a bowl. Allow to sit to meld flavors before serving.

Notes

Make-ahead tips: Meatball mixture can be made a day in advance. For grilling alternatives, bake at 400°F for about 20 minutes or use an air fryer at 375°F.
