Description

These herb and garlic baked potatoes are a comforting side dish, boasting a crispy exterior and fluffy interior, infused with garlic and fresh herbs.


Ingredients

  • 4 medium Russet or Yukon Gold potatoes
  • 2 tablespoons olive oil (or avocado oil)
  • 3 cloves garlic, minced
  • 2 tablespoons fresh herbs (e.g., rosemary, thyme)
  • Salt & pepper to taste

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Wash and scrub the potatoes thoroughly, then dry them completely.
  3. Grab a fork and poke holes all over each potato, about 4-6 times.
  4. In a mixing bowl, combine the olive oil, minced garlic, fresh herbs, salt, and pepper.
  5. Rub the herb and garlic mixture all over the potatoes.
  6. Place the potatoes on a baking sheet and bake for 45-60 minutes, until tender.
  7. Serve hot, optionally topped with additional herbs or butter.
