Description

Deliciously sweet and tangy homemade lemon crumb bars that are perfect for any occasion, featuring a crumbly crust and a creamy lemon filling.


Ingredients

  • 1 cup all-purpose flour
  • 1/2 cup unsalted butter, softened
  • 1/4 cup granulated sugar
  • 1/2 cup rolled oats
  • 1 cup granulated sugar (for filling)
  • 2 large eggs
  • 1/2 cup fresh lemon juice
  • 1 tbsp lemon zest
  • 1/4 cup all-purpose flour (for filling)
  • 1/2 tsp baking powder
  • 1/4 tsp salt

Instructions

  1. Preheat the oven to 350°F (175°C). Grease an 8×8-inch baking dish.
  2. Combine 1 cup flour, oats, 1/2 cup softened butter, and 1/4 cup sugar in a bowl until crumbly.
  3. Press the mixture into the bottom of the greased baking dish.
  4. Bake the crust for 15 minutes until lightly golden.
  5. Whisk together 1 cup sugar, 2 eggs, lemon juice, 1/4 cup flour, baking powder, and salt until smooth.
  6. Pour the lemon filling over the baked crust.
  7. Sprinkle the remaining crumb mixture over the top.
  8. Bake for an additional 20-25 minutes until set.
  9. Cool before cutting into bars.

Notes

For best results, use fresh lemon juice and zest. Allow bars to cool completely before cutting for clean slices.
