- 1 cup all-purpose flour
- 1/2 cup unsalted butter, softened
- 1/4 cup granulated sugar
- 1/2 cup rolled oats
- 1 cup granulated sugar (for filling)
- 2 large eggs
- 1/2 cup fresh lemon juice
- 1 tbsp lemon zest
- 1/4 cup all-purpose flour (for filling)
- 1/2 tsp baking powder
- 1/4 tsp salt
Instructions
- Preheat the oven to 350°F (175°C). Grease an 8×8-inch baking dish.
- Combine 1 cup flour, oats, 1/2 cup softened butter, and 1/4 cup sugar in a bowl until crumbly.
- Press the mixture into the bottom of the greased baking dish.
- Bake the crust for 15 minutes until lightly golden.
- Whisk together 1 cup sugar, 2 eggs, lemon juice, 1/4 cup flour, baking powder, and salt until smooth.
- Pour the lemon filling over the baked crust.
- Sprinkle the remaining crumb mixture over the top.
- Bake for an additional 20-25 minutes until set.
- Cool before cutting into bars.
Notes
For best results, use fresh lemon juice and zest. Allow bars to cool completely before cutting for clean slices.
