Description

Ingredients

  • 3 tablespoons Honey
  • Juice of 2 Limes
  • 2 tablespoons Olive Oil
  • Salt and Pepper to taste
  • 1 Avocado
  • 1 cup Rice (white, brown, or jasmine)
  • Optional vegetables or herbs (cilantro, green onions)

Instructions

  1. Prepare the Marinade: In a mixing bowl, whisk together honey, lime juice, olive oil, salt, and pepper until smooth.
  2. Marinate the Chicken: Place the chicken breasts in the marinade, ensuring they are well-coated. Cover and marinate for at least 30 minutes, or overnight for deeper flavor.
  3. Cook the Rice: While the chicken marinates, cook your rice according to the package instructions. Fluff with a fork once done and set aside.
  4. Cook the Chicken: Heat a non-stick skillet over medium-high heat. Add the marinated chicken and cook for 5–7 minutes on each side, or until golden brown and cooked through.
  5. Prepare the Avocado Rice: In a bowl, mash the avocado until creamy, then fold it into the cooked rice.
  6. Assemble and Serve: Place a generous scoop of the avocado rice on a plate and lay the honey lime chicken on top. Garnish with optional vegetables or fresh herbs.
