A quick and easy recipe for a tender and juicy rotisserie-style chicken made in the Instant Pot, perfect for busy weeknights or special gatherings.

- 1 whole chicken (about 4–5 lbs)
- 2 tablespoons olive oil
- 2 teaspoons salt
- 1 teaspoon black pepper
- 2 teaspoons garlic powder
- 1 teaspoon onion powder
- 1 teaspoon paprika
- 1 teaspoon dried thyme
- 1 cup chicken broth
Instructions
- Pat the chicken dry with paper towels.
- Rub the olive oil all over the chicken.
- Mix the salt, pepper, garlic powder, onion powder, paprika, and thyme in a small bowl.
- Generously rub the spice mixture over the chicken.
- Pour the chicken broth into the Instant Pot.
- Place the chicken on the trivet in the pot, breast side up.
- Close the lid and set the valve to sealing.
- Cook on high pressure for 28 minutes.
- Allow for 10 minutes of natural pressure release before quickly releasing any remaining pressure.
- Carefully remove the chicken and let it rest for a few minutes before carving.
Notes
For crispier skin, broil the chicken in the oven for a few minutes after it finishes cooking.
