Description

A quick and easy recipe for a tender and juicy rotisserie-style chicken made in the Instant Pot, perfect for busy weeknights or special gatherings.


Ingredients

  • 1 whole chicken (about 45 lbs)
  • 2 tablespoons olive oil
  • 2 teaspoons salt
  • 1 teaspoon black pepper
  • 2 teaspoons garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon paprika
  • 1 teaspoon dried thyme
  • 1 cup chicken broth

Instructions

  1. Pat the chicken dry with paper towels.
  2. Rub the olive oil all over the chicken.
  3. Mix the salt, pepper, garlic powder, onion powder, paprika, and thyme in a small bowl.
  4. Generously rub the spice mixture over the chicken.
  5. Pour the chicken broth into the Instant Pot.
  6. Place the chicken on the trivet in the pot, breast side up.
  7. Close the lid and set the valve to sealing.
  8. Cook on high pressure for 28 minutes.
  9. Allow for 10 minutes of natural pressure release before quickly releasing any remaining pressure.
  10. Carefully remove the chicken and let it rest for a few minutes before carving.

Notes

For crispier skin, broil the chicken in the oven for a few minutes after it finishes cooking.
