- 1 Cup Raw Cashews (soaked for one hour in hot water and drained)
- 1/2 Cup Oat Milk (for lemon layer)
- 2 Tablespoons Maple Syrup (for lemon layer)
- 2 Tablespoons Lemon Juice
- 1/4 Teaspoon Turmeric (for color)
- 1/2 Teaspoon Lemon Extract
Instructions
- Prepare the Chia Seed Mixture: In a mixing bowl, combine the chia seeds, oat milk, lemon zest, maple syrup, vanilla extract, and sea salt. Whisk until smooth.
- Let It Set: Cover the bowl and refrigerate for about 3 hours or overnight.
- Soak the Cashews: Soak the cashews in hot water for one hour, then drain.
- Blend the Lemon Cream: In a blender, blend soaked cashews, oat milk, maple syrup, lemon juice, turmeric, and lemon extract until smooth.
- Divide the chia mixture into jars, creating the pudding layer.
- Top with Lemon Cream: Pour the lemon cream over each pudding layer.
- Final Chill: Refrigerate for another 3 hours.
- Serve and Enjoy: Optionally, top with fresh berries or granola.
Notes
Soak cashews in advance for the best texture. Can be prepared a day ahead.
