Description

Delightful Lemon Crumb Bars with a buttery crumble and a creamy lemon filling.


Ingredients

  • 1 1/2 cups all-purpose flour
  • 1/2 cup unsalted butter, softened
  • 1/2 cup sugar
  • 1/4 teaspoon salt
  • 1/2 cup lemon juice
  • 1 cup powdered sugar
  • 1 teaspoon lemon zest
  • 1/2 teaspoon baking powder
  • 2 large eggs

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a 9×9 inch baking pan.
  2. Prepare the crumb mixture by mixing flour, softened butter, sugar, and salt until crumbly.
  3. Press half of the mixture evenly into the bottom of your prepared pan.
  4. Whisk together lemon juice, powdered sugar, lemon zest, eggs, and baking powder in another bowl.
  5. Pour the lemon mixture over the crust and spread it out evenly.
  6. Crumble the remaining flour mixture over the lemon layer.
  7. Bake for 20-25 minutes until the top turns lightly golden.
  8. Cool completely in the pan before slicing into squares.
