Ingredients

- 1 cup rolled oats
- 1/2 cup almond butter or peanut butter
- 1/4 cup maple syrup or honey
- 2 tablespoons lemon juice
- 1 tablespoon lemon zest
- 1/4 cup poppy seeds
- 1/2 teaspoon vanilla extract
- Pinch of salt
Instructions
- In a large bowl, combine the rolled oats, almond butter, maple syrup, lemon juice, lemon zest, poppy seeds, vanilla extract, and a pinch of salt. Mix thoroughly until every ingredient is evenly combined.
- With your hands, scoop out portions of the mixture and roll them into small balls, about 1 inch in diameter.
- Place the energy bites onto a baking sheet lined with parchment paper, leaving a bit of space between them.
- Pop the baking sheet into the refrigerator and let them chill for at least 30 minutes.
- After chilling, transfer the energy bites to an airtight container and store them in the refrigerator.
Notes
If too sticky, sprinkle in more oats. Great for meal prep and can be frozen.
