Description

A creamy, cheesy dip loaded with sausage, tomatoes, and beans that makes for the perfect party snack.


Ingredients

Scale
  • 1 lb ground sausage
  • 1 can Rotel tomatoes
  • 1 lb Velveeta cheese
  • 1 can beans (black or pinto)
  • 1/2 cup milk
  • 1 tsp chili powder
  • 1 tsp garlic powder
  • Salt and pepper to taste
  • Tortilla chips for serving

Instructions

  1. In a large skillet, cook the sausage over medium heat, breaking it apart with a spatula until browned and cooked through. Drain any excess fat.
  2. Scoop in the Rotel tomatoes, beans, and pour in the milk, stirring to combine.
  3. Cube the Velveeta cheese and add it to the skillet, encouraging it to meld together.
  4. Stir gently until the cheese has melted completely and everything is warmed through.
  5. Sprinkle in chili powder, garlic powder, and adjust with salt and pepper to taste.
  6. Serve warm with tortilla chips.

Notes

Make-ahead option: Prepare a day before and refrigerate; reheat on the stove with a splash of milk. Customize by adding jalapeños or corn for extra flavor.
