- 1 lb ground sausage
- 1 can Rotel tomatoes
- 1 lb Velveeta cheese
- 1 can beans (black or pinto)
- 1/2 cup milk
- 1 tsp chili powder
- 1 tsp garlic powder
- Salt and pepper to taste
- Tortilla chips for serving
Instructions
- In a large skillet, cook the sausage over medium heat, breaking it apart with a spatula until browned and cooked through. Drain any excess fat.
- Scoop in the Rotel tomatoes, beans, and pour in the milk, stirring to combine.
- Cube the Velveeta cheese and add it to the skillet, encouraging it to meld together.
- Stir gently until the cheese has melted completely and everything is warmed through.
- Sprinkle in chili powder, garlic powder, and adjust with salt and pepper to taste.
- Serve warm with tortilla chips.
Notes
Make-ahead option: Prepare a day before and refrigerate; reheat on the stove with a splash of milk. Customize by adding jalapeños or corn for extra flavor.
