Description

Delicious marinated grilled steak fajitas with vibrant bell peppers and onions, served in warm tortillas.


Ingredients

  • 1 lb flank steak
  • 2 tablespoons olive oil
  • 2 tablespoons lime juice
  • 1 tablespoon soy sauce
  • 1 teaspoon cumin
  • 1 teaspoon chili powder
  • 1 bell pepper, sliced
  • 1 onion, sliced
  • Salt and pepper to taste
  • Tortillas for serving

Instructions

  1. Create the Marinade: In a bowl, whisk together the olive oil, lime juice, soy sauce, cumin, chili powder, salt, and pepper. Take a moment to breathe in the aromatic blend.
  2. Marinate the Steak: Add the flank steak to the marinade, ensuring it’s well coated on all sides. For maximum flavor, allow it to marinate for at least 30 minutes (or longer if you can!).
  3. Prepare the Grill: Preheat your grill to medium-high heat. A hot grill gives that desirable char and sear.
  4. Grill the Steak: Place the marinated flank steak on the hot grill. Grill for 6-8 minutes on each side, or until it reaches your desired doneness. Don’t forget to check the temperature!
  5. Rest the Steak: Once done, remove the steak from the grill and let it rest for a few minutes. This crucial step allows the juices to redistribute, ensuring each bite is juicy and tender.
  6. Grill the Vegetables: In the same grill, toss the sliced bell pepper and onion, grilling until they soften and acquire a lovely char, about 5 minutes.
  7. Slice and Serve: Once the steak has rested, slice it against the grain into strips and serve in warm tortillas. Top with the grilled vegetables and your favorite garnishes.

Notes
