Description

Deliciously fluffy poppers filled with creamy mashed potatoes and gooey cheese, perfect for using up leftovers.


Ingredients

  • 1 cup Leftover Mashed Potatoes
  • 2 Eggs
  • 1 cup Cheese (cheddar or mozzarella)
  • 1/2 cup All-Purpose Flour
  • 1/4 cup Milk or Cream
  • Salt and Pepper to taste
  • Optional: Garlic Powder or Chives

Instructions

  1. Preheat the oven to 425°F (220°C).
  2. Grease each cup of your muffin tin or popover pan.
  3. Mix the mashed potatoes, eggs, and milk in a large bowl until smooth.
  4. Add cheese and seasonings, stirring well.
  5. Incorporate flour gradually, mixing until just combined.
  6. Fill each muffin tin cup about three-quarters full.
  7. Bake for 20-25 minutes until golden-brown.
  8. Cool slightly before serving warm.

Notes

These poppers can be prepared ahead of time. Refrigerate the batter and bring to room temperature before baking.
