- 1 lb ground beef or pork
- 1 cup breadcrumbs
- 2 eggs
- 3 cloves garlic, minced
- 1 onion, finely chopped
- 1/4 cup fresh parsley, chopped
- 1 tsp salt
- 1/2 tsp black pepper
- 2 tbsp olive oil
- 1 can (14 oz) canned tomatoes
- 1 tsp Italian herbs (oregano and basil)
- 1 tsp sugar (optional)
Instructions
- Mix the ingredients: In a large mixing bowl, combine the ground meat, breadcrumbs, eggs, minced garlic, finely chopped onion, parsley, salt, and pepper. Use your hands to mix gently but thoroughly. Form the mixture into golf ball-sized meatballs.
- Brown the meatballs: Heat olive oil in a skillet over medium heat. Once the oil shimmers, place the meatballs in the pan and sear them for about 4-5 minutes until golden brown.
- Set the meatballs aside: Once browned, remove the meatballs from the skillet and place on a plate.
- Prepare the sauce: In the same skillet, add the canned tomatoes and Italian herbs. Stir well and let simmer for about 10 minutes.
- Return meatballs to the sauce: Place the browned meatballs back into the skillet, ensuring they’re submerged in the sauce. Cover and let simmer for another 15-20 minutes.
- Serve and savor: Serve meatballs over pasta, crusty bread, or creamy polenta. Garnish with parsley and Parmesan if desired.
