Instructions
- Cook the Orzo: Bring a large pot of salted water to a boil. Add the orzo pasta and cook according to package instructions until al dente. Drain and allow to cool.
- Combine Ingredients: In a large mixing bowl, toss the cooled orzo with cherry tomatoes, cucumber, bell pepper, and red onion until well mixed.
- Prepare the Dressing: In a small bowl, whisk together olive oil, lemon juice, salt, and pepper until well combined.
- Dress the Salad: Pour the dressing over the pasta and vegetables, tossing gently to coat.
- Add Cheese and Olives: Fold in feta cheese and black olives. Mix gently to maintain the shape of the feta.
- Serve: Enjoy the salad immediately or refrigerate for up to an hour for flavors to meld.
