Description

A vibrant and wholesome Mediterranean Orzo Pasta Salad bursting with flavors and textures that celebrate summer.


Ingredients

  • 1 cup Orzo Pasta
  • 1 cup Cherry Tomatoes, halved
  • 1 cup Cucumber, diced
  • 1 cup Bell Pepper, diced
  • 1/2 cup Red Onion, finely sliced
  • 1/4 cup Olive Oil
  • 1/4 cup Lemon Juice
  • 1 cup Feta Cheese, crumbled
  • 1/2 cup Black Olives, sliced
  • 1/4 cup Fresh Parsley, chopped
  • 1/4 cup Fresh Basil, chopped
  • Salt and Pepper, to taste

Instructions

  1. Cook the Orzo: Bring a large pot of salted water to a boil. Add the orzo pasta and cook according to package instructions until al dente. Drain and allow to cool.
  2. Combine Ingredients: In a large mixing bowl, toss the cooled orzo with cherry tomatoes, cucumber, bell pepper, and red onion until well mixed.
  3. Prepare the Dressing: In a small bowl, whisk together olive oil, lemon juice, salt, and pepper until well combined.
  4. Dress the Salad: Pour the dressing over the pasta and vegetables, tossing gently to coat.
  5. Add Cheese and Olives: Fold in feta cheese and black olives. Mix gently to maintain the shape of the feta.
  6. Serve: Enjoy the salad immediately or refrigerate for up to an hour for flavors to meld.
