Description

A delicious Mexican Chopped Cheese Sandwich featuring flavorful ground beef or chorizo, melted cheese, and fresh veggies, all nestled in golden, grilled bread.


Ingredients

  • 2 slices of thick bread (brioche or sourdough)
  • 1 cup chopped cheese (cheddar or American)
  • 1/2 cup cooked ground beef or chorizo
  • 1/4 cup diced jalapeños
  • 1/4 cup diced onions
  • 1/4 cup diced tomatoes
  • 1/4 cup shredded lettuce
  • 2 tablespoons mayonnaise
  • 1 tablespoon mustard
  • Butter for grilling

Instructions

  1. Heat your skillet over medium heat. Add your cooked ground beef or chorizo, breaking it up as it browns.
  2. Toss in the diced onions and jalapeños once the meat is finished browning. Sauté until soft, about 3–4 minutes.
  3. Sprinkle the chopped cheese over the meat mixture and allow it to melt for about 1–2 minutes.
  4. Spread mayonnaise on one side of each bread slice and mustard on the opposite side.
  5. Spoon the melted mixture onto one bread slice, then layer with diced tomatoes and shredded lettuce.
  6. Place the second slice of bread on top, mayonnaise side down.
  7. Add a pat of butter to the skillet and melt. Grill the sandwich until golden brown, roughly 2–3 minutes per side.
  8. Slice diagonally and serve warm.

Notes

For added flavor, try different types of cheese or add toppings like avocado or crispy bacon.
