- 2 slices of thick bread (brioche or sourdough)
- 1 cup chopped cheese (cheddar or American)
- 1/2 cup cooked ground beef or chorizo
- 1/4 cup diced jalapeños
- 1/4 cup diced onions
- 1/4 cup diced tomatoes
- 1/4 cup shredded lettuce
- 2 tablespoons mayonnaise
- 1 tablespoon mustard
- Butter for grilling
Instructions
- Heat your skillet over medium heat. Add your cooked ground beef or chorizo, breaking it up as it browns.
- Toss in the diced onions and jalapeños once the meat is finished browning. Sauté until soft, about 3–4 minutes.
- Sprinkle the chopped cheese over the meat mixture and allow it to melt for about 1–2 minutes.
- Spread mayonnaise on one side of each bread slice and mustard on the opposite side.
- Spoon the melted mixture onto one bread slice, then layer with diced tomatoes and shredded lettuce.
- Place the second slice of bread on top, mayonnaise side down.
- Add a pat of butter to the skillet and melt. Grill the sandwich until golden brown, roughly 2–3 minutes per side.
- Slice diagonally and serve warm.
Notes
For added flavor, try different types of cheese or add toppings like avocado or crispy bacon.
