Description

A delightful fusion of Brussels sprouts and the vibrant flavors of Mexican street corn. This dish features crispy roasted sprouts topped with creamy cotija cheese, zesty lime, and smoky chili powder.


Ingredients

  • 1 lb Brussels sprouts, trimmed and halved
  • 1/2 cup cotija cheese, crumbled
  • 2 tsp chili powder
  • 2 tbsp lime juice
  • 1/2 cup crema (or sour cream/Greek yogurt)
  • 2 tbsp olive oil
  • Salt, to taste
  • Pepper, to taste

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Prepare the Brussels sprouts by trimming and halving them.
  3. Drizzle olive oil over the sprouts and season with salt and pepper, then toss to coat.
  4. Roast in the oven for 20-25 minutes until golden-brown and crisp.
  5. Mix the crema, lime juice, and chili powder in a bowl.
  6. Toss the roasted sprouts in the crema mixture while hot.
  7. Crumble cotija cheese over the top before serving.
  8. Serve warm for the best flavor and texture.

Notes
