Description

Ingredients

  • 4 ears of corn, husked and ready to grill
  • 1 cup cherry tomatoes, halved
  • 1/2 cup red onion, diced
  • 1/4 cup cilantro, chopped
  • 1/2 cup crumbled feta cheese
  • 1/4 cup mayonnaise
  • 1 tablespoon lime juice
  • 1 teaspoon chili powder
  • Salt and pepper, to taste

Instructions

  1. Grill the corn on medium heat for about 10 minutes, turning occasionally until char marks develop.
  2. Cool the corn slightly, then cut the kernels off the cob into a large mixing bowl.
  3. Combine the halved cherry tomatoes, diced red onion, chopped cilantro, and crumbled feta cheese with the corn.
  4. Make the dressing in a separate small bowl by whisking together mayonnaise, lime juice, chili powder, salt, and pepper until smooth.
