Description
A fragrant and flavorful dish featuring juicy chicken thighs and aromatic jasmine rice, cooked to perfection with shawarma spices in a single pot.
Ingredients
Scale
- 1 lb chicken thighs, boneless and skinless
- 2 cups jasmine rice
- 1 onion, chopped
- 3 cloves garlic, minced
- 1 tablespoon shawarma spice mix
- 1 can (14 oz) diced tomatoes
- 3 cups chicken broth
- 1/4 cup olive oil
- Salt and pepper to taste
- Fresh parsley for garnish
Instructions
- Heat the oil: In a large pot, heat olive oil over medium heat. Add the chopped onion and garlic, cooking until softened and aromatic—about 3-4 minutes.
- Season the chicken: While the onion mixture cooks, season chicken thighs generously with shawarma spice, salt, and pepper. Add them to the pot and brown on both sides, about 5 minutes per side.
- Combine ingredients: Stir in the jasmine rice, diced tomatoes with their juices, and chicken broth. Bring everything to a vigorous boil.
- Cook the rice: Reduce the heat to low, cover, and let simmer for about 20-25 minutes, or until the rice is tender and has absorbed the liquid.
- Rest the dish: Once cooking time is up, remove from heat and let it sit covered for 5 minutes.
- Garnish and serve: Fluff the rice with a fork, then beautifully garnish with fresh parsley before serving.
