Description

  • 2 cups jasmine rice
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 1 tablespoon shawarma spice mix
  • 1 can (14 oz) diced tomatoes
  • 3 cups chicken broth
  • 1/4 cup olive oil
  • Salt and pepper to taste
  • Fresh parsley for garnish

Instructions

  1. Heat the oil: In a large pot, heat olive oil over medium heat. Add the chopped onion and garlic, cooking until softened and aromatic—about 3-4 minutes.
  2. Season the chicken: While the onion mixture cooks, season chicken thighs generously with shawarma spice, salt, and pepper. Add them to the pot and brown on both sides, about 5 minutes per side.
  3. Combine ingredients: Stir in the jasmine rice, diced tomatoes with their juices, and chicken broth. Bring everything to a vigorous boil.
  4. Cook the rice: Reduce the heat to low, cover, and let simmer for about 20-25 minutes, or until the rice is tender and has absorbed the liquid.
  5. Rest the dish: Once cooking time is up, remove from heat and let it sit covered for 5 minutes.
  6. Garnish and serve: Fluff the rice with a fork, then beautifully garnish with fresh parsley before serving.
