Description

Golden-brown crumb bars filled with juicy peaches and a hint of lemon, perfect for summer gatherings.


Ingredients

  • 4 cups fresh peaches, sliced
  • 1 cup granulated sugar
  • 2 tablespoons lemon juice
  • 2 cups all-purpose flour
  • 1 cup rolled oats
  • 1 cup brown sugar
  • 1 cup unsalted butter, melted
  • 1 teaspoon cinnamon
  • 1/2 teaspoon salt

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a 9×13 inch baking pan.
  2. Combine sliced peaches, granulated sugar, and lemon juice in a bowl and set aside.
  3. Whisk together flour, oats, brown sugar, cinnamon, and salt; then stir in melted butter until crumbly.
  4. Press half of the crumb mixture into the bottom of the pan.
  5. Spread the peach filling over the crust, then sprinkle the remaining crumb mixture on top.
  6. Bake for 30-35 minutes, until golden brown.
  7. Cool in the pan before slicing.

Notes

Using ripe but firm peaches will yield the best results. These bars can be frozen for up to 3 months.
