Golden-brown crumb bars filled with juicy peaches and a hint of lemon, perfect for summer gatherings.
Ingredients

- 4 cups fresh peaches, sliced
- 1 cup granulated sugar
- 2 tablespoons lemon juice
- 2 cups all-purpose flour
- 1 cup rolled oats
- 1 cup brown sugar
- 1 cup unsalted butter, melted
- 1 teaspoon cinnamon
- 1/2 teaspoon salt
Instructions
- Preheat your oven to 350°F (175°C) and grease a 9×13 inch baking pan.
- Combine sliced peaches, granulated sugar, and lemon juice in a bowl and set aside.
- Whisk together flour, oats, brown sugar, cinnamon, and salt; then stir in melted butter until crumbly.
- Press half of the crumb mixture into the bottom of the pan.
- Spread the peach filling over the crust, then sprinkle the remaining crumb mixture on top.
- Bake for 30-35 minutes, until golden brown.
- Cool in the pan before slicing.
Notes
Using ripe but firm peaches will yield the best results. These bars can be frozen for up to 3 months.
