Description

A vibrant dressing combining ripe peaches, honey, and Dijon mustard for a perfect summer addition to salads and grilled meats.

Ingredients

Scale
  • 2 cups ripe peaches (diced)
  • 1 tablespoon honey (or maple syrup for a vegan option)
  • 1 tablespoon Dijon mustard
  • 1/4 cup balsamic vinegar
  • 1/2 cup olive oil (extra-virgin recommended)
  • Salt and pepper to taste

Instructions

  1. Prep the peaches: Begin by washing and peeling your peaches. Cut them into small, diced pieces, allowing their sweet juices to spill as you chop.
  2. Combine ingredients: In a blender or food processor, add the diced peaches, honey, Dijon mustard, balsamic vinegar, and a pinch of salt and pepper.
  3. Emulsify: Blend the mixture on high for 30 seconds until smooth.
  4. Incorporate olive oil: With the blender running on low, slowly drizzle in the olive oil until fully combined.
  5. Taste and adjust: Give your vinaigrette a taste and adjust with additional salt, pepper, or honey.
  6. Chill: Transfer the vinaigrette to a jar and refrigerate for at least 30 minutes to enhance the flavors.

Notes

Make-ahead tips: Prepare this vinaigrette a day in advance for deeper flavors. It also works as a marinade for chicken or fish.
