Description

Decadent peppermint cookie bars that are perfect for the holidays, featuring a buttery base topped with creamy frosting and crunchy peppermint candies.


Ingredients

  • 2 1/4 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 cup unsalted butter, softened
  • 1 1/2 cups granulated sugar
  • 1 egg
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon peppermint extract
  • 1 cup powdered sugar
  • 2 tablespoons milk
  • Red food coloring
  • Crushed peppermint candies for topping

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a 9×13 inch baking pan or line it with parchment paper.
  2. Whisk together the flour, baking soda, and salt in a mixing bowl.
  3. Beat the softened butter and granulated sugar together until light and fluffy, about 2-3 minutes.
  4. Add the egg, vanilla extract, and peppermint extract to the butter mixture and mix until incorporated.
  5. Gradually mix in the flour mixture until just combined.
  6. Spread the dough evenly in the prepared pan.
  7. Bake for 20-25 minutes, until the edges are golden and a toothpick comes out clean.
  8. Cool in the pan for 10 minutes before transferring to a wire rack to cool completely.
  9. Combine the powdered sugar, milk, and red food coloring in a bowl for the frosting.
  10. Spread the frosting over the cooled bars and sprinkle crushed peppermint candies on top.
  11. Cut into squares and serve.

Notes

These bars can be prepared a day in advance and stored in an airtight container for up to 5 days. They can also be frozen for up to 2 months.
