Decadent peppermint cookie bars that are perfect for the holidays, featuring a buttery base topped with creamy frosting and crunchy peppermint candies.

- 2 1/4 cups all-purpose flour
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 1 cup unsalted butter, softened
- 1 1/2 cups granulated sugar
- 1 egg
- 1 teaspoon vanilla extract
- 1/2 teaspoon peppermint extract
- 1 cup powdered sugar
- 2 tablespoons milk
- Red food coloring
- Crushed peppermint candies for topping
Instructions
- Preheat your oven to 350°F (175°C) and grease a 9×13 inch baking pan or line it with parchment paper.
- Whisk together the flour, baking soda, and salt in a mixing bowl.
- Beat the softened butter and granulated sugar together until light and fluffy, about 2-3 minutes.
- Add the egg, vanilla extract, and peppermint extract to the butter mixture and mix until incorporated.
- Gradually mix in the flour mixture until just combined.
- Spread the dough evenly in the prepared pan.
- Bake for 20-25 minutes, until the edges are golden and a toothpick comes out clean.
- Cool in the pan for 10 minutes before transferring to a wire rack to cool completely.
- Combine the powdered sugar, milk, and red food coloring in a bowl for the frosting.
- Spread the frosting over the cooled bars and sprinkle crushed peppermint candies on top.
- Cut into squares and serve.
Notes
These bars can be prepared a day in advance and stored in an airtight container for up to 5 days. They can also be frozen for up to 2 months.
