Description

A comforting dish featuring tender pasta coated in a creamy basil pesto, accompanied by juicy chicken and vibrant cherry tomatoes.


Ingredients

  • Pasta (penne or fusilli)
  • 1 pound Chicken Breast
  • 1 cup Pesto Sauce
  • 1 cup Cherry Tomatoes, halved
  • 1/2 cup Grated Parmesan Cheese
  • Zest of 1 Lemon
  • 2 tablespoons Olive Oil
  • Salt and Pepper to taste

Instructions

  1. Bring a large pot of salted water to a boil. Cook pasta according to package instructions until al dente, about 8-10 minutes.
  2. Heat olive oil in a skillet over medium-high heat. Add seasoned chicken breast and sear for 5-7 minutes on each side until golden and cooked through.
  3. Remove chicken from the skillet and let it rest before slicing into thin pieces.
  4. Add the pesto sauce and a splash of reserved pasta cooking water to the skillet. Stir to enhance the sauce’s silkiness.
  5. Toss in drained pasta and sliced chicken into the skillet to coat everything in pesto.
  6. Serve hot, garnished with halved cherry tomatoes, Parmesan cheese, and lemon zest.

Notes

For a quicker meal, prepare pesto in advance. Customize with additional vegetables like spinach or bell peppers.
