- 1 pound Chicken Breast
- 1 cup Pesto Sauce
- 1 cup Cherry Tomatoes, halved
- 1/2 cup Grated Parmesan Cheese
- Zest of 1 Lemon
- 2 tablespoons Olive Oil
- Salt and Pepper to taste
Instructions
- Bring a large pot of salted water to a boil. Cook pasta according to package instructions until al dente, about 8-10 minutes.
- Heat olive oil in a skillet over medium-high heat. Add seasoned chicken breast and sear for 5-7 minutes on each side until golden and cooked through.
- Remove chicken from the skillet and let it rest before slicing into thin pieces.
- Add the pesto sauce and a splash of reserved pasta cooking water to the skillet. Stir to enhance the sauce’s silkiness.
- Toss in drained pasta and sliced chicken into the skillet to coat everything in pesto.
- Serve hot, garnished with halved cherry tomatoes, Parmesan cheese, and lemon zest.
