Delicious and tender pork meatballs served over a creamy sweet potato mash and drizzled with a rich bourbon-maple sauce.

- 1 lb Ground Pork
- 1 cup Breadcrumbs
- 1 Egg
- 2 cloves Garlic (minced)
- 1 Onion (finely chopped)
- Salt & Pepper to taste
- 2 Sweet Potatoes (peeled and cubed)
- 2 tbsp Butter
- 1/2 cup Bourbon
- 1/4 cup Maple Syrup
- 1 tbsp Mustard
- 1 tbsp Olive Oil
Instructions
- Preheat your oven: Set it to 400°F (200°C).
- Mix your meatballs: In a large mixing bowl, combine the ground pork, breadcrumbs, egg, minced garlic, chopped onion, salt, and pepper.
- Form the mixture into small meatballs, ensuring they’re compact but not overly tight.
- Bake your meatballs: Arrange on a parchment-lined baking sheet and bake for 20-25 minutes until golden.
- Prepare the sweet potatoes: Boil cubed sweet potatoes in salted water until soft, about 15-20 minutes, then mash with butter.
- Make the bourbon-maple sauce: In a saucepan, combine bourbon, maple syrup, and mustard; simmer until thickened.
- Plate and serve: On each plate, create a bed of sweet potato mash, top with meatballs, and drizzle with sauce.
Notes
You can prepare meatballs in advance and store them in the fridge for up to 24 hours before baking.
