Description

A flavorful one-pot meal combining succulent chicken thighs, aromatic spices, and fluffy rice for a comforting dining experience.


Ingredients

  • 4 chicken thighs
  • 2 cups long grain rice
  • 1 onion, chopped
  • 4 cloves garlic, minced
  • 1 red bell pepper, diced
  • 1 green bell pepper, diced
  • 1 teaspoon paprika
  • 1 teaspoon cayenne pepper
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 can (14 oz) diced tomatoes
  • 4 cups chicken broth
  • 2 tablespoons olive oil
  • Fresh cilantro, for garnish

Instructions

  1. Sear the chicken: In a large skillet, heat olive oil over medium heat. Season chicken thighs with salt, black pepper, paprika, and cayenne. Sear until golden brown, about 5-7 minutes. Remove and set aside.
  2. Sauté vegetables: In the same skillet, add onion, garlic, and bell peppers. Sauté until softened, about 5 minutes.
  3. Toast the rice: Stir in the rice and toast for about 2 minutes.
  4. Add tomatoes and broth: Pour in diced tomatoes and chicken broth. Bring to a boil, scraping browned bits from the bottom.
  5. Combine and simmer: Return chicken to skillet, cover, reduce heat, and simmer for 20-25 minutes until rice is tender and chicken is cooked through.
  6. Final touch: Garnish with fresh cilantro before serving.

Notes

Make-ahead by marinating chicken a day in advance for deeper flavor. Can be customized with different vegetables or proteins.
