- 1/2 teaspoon black pepper
- 1 can (14 oz) diced tomatoes
- 4 cups chicken broth
- 2 tablespoons olive oil

Instructions
- Sear the chicken: In a large skillet, heat olive oil over medium heat. Season chicken thighs with salt, black pepper, paprika, and cayenne. Sear until golden brown, about 5-7 minutes. Remove and set aside.
- Sauté vegetables: In the same skillet, add onion, garlic, and bell peppers. Sauté until softened, about 5 minutes.
- Toast the rice: Stir in the rice and toast for about 2 minutes.
- Add tomatoes and broth: Pour in diced tomatoes and chicken broth. Bring to a boil, scraping browned bits from the bottom.
- Combine and simmer: Return chicken to skillet, cover, reduce heat, and simmer for 20-25 minutes until rice is tender and chicken is cooked through.
- Final touch: Garnish with fresh cilantro before serving.
