- 8 oz Wide Lo Mein Noodles (cooked and rinsed)
- 1 tablespoon Peanut Oil
- 1 pound Ground Pork
- 1/4 cup + 2 tablespoons Sliced Green Onions
- 1/2 cup Low-Sodium Chicken Broth
- 3 tablespoons Mirin
- 2 tablespoons Dark Soy Sauce
- 1 tablespoon Minced Garlic
- 2 teaspoons Grated Ginger
- 1 teaspoon Sesame Oil
- 1/2 teaspoon Sriracha
- 4 cups Coleslaw Mix
Instructions
- Cook the noodles: Bring a large pot of water to a boil, add the wide lo mein noodles, and cook according to the package instructions until tender. Rinse the noodles under cold water to halt the cooking process and set aside.
- Sauté the pork: Heat the peanut oil in your skillet over medium heat. Add the ground pork and 1/4 cup of sliced green onions. Sauté this mixture until the pork is well-cooked and turns a golden brown.
- Whisk the sauce: In a separate bowl, combine the chicken broth, mirin, dark soy sauce, minced garlic, grated ginger, sesame oil, and sriracha. Whisk until smooth.
- Combine ingredients: Add the cooked noodles and coleslaw mix to the skillet with the sautéed pork. Pour the sauce over everything. Toss gently and heat through for 2-3 minutes.
- Garnish and Serve: Finish with a sprinkle of remaining sliced green onions and serve warm.
