Description

A delightful blend of savory ground pork, crisp vegetables, and silky noodles in a rich sauce that warms the heart.


Ingredients

  • 8 oz Wide Lo Mein Noodles (cooked and rinsed)
  • 1 tablespoon Peanut Oil
  • 1 pound Ground Pork
  • 1/4 cup + 2 tablespoons Sliced Green Onions
  • 1/2 cup Low-Sodium Chicken Broth
  • 3 tablespoons Mirin
  • 2 tablespoons Dark Soy Sauce
  • 1 tablespoon Minced Garlic
  • 2 teaspoons Grated Ginger
  • 1 teaspoon Sesame Oil
  • 1/2 teaspoon Sriracha
  • 4 cups Coleslaw Mix

Instructions

  1. Cook the noodles: Bring a large pot of water to a boil, add the wide lo mein noodles, and cook according to the package instructions until tender. Rinse the noodles under cold water to halt the cooking process and set aside.
  2. Sauté the pork: Heat the peanut oil in your skillet over medium heat. Add the ground pork and 1/4 cup of sliced green onions. Sauté this mixture until the pork is well-cooked and turns a golden brown.
  3. Whisk the sauce: In a separate bowl, combine the chicken broth, mirin, dark soy sauce, minced garlic, grated ginger, sesame oil, and sriracha. Whisk until smooth.
  4. Combine ingredients: Add the cooked noodles and coleslaw mix to the skillet with the sautéed pork. Pour the sauce over everything. Toss gently and heat through for 2-3 minutes.
  5. Garnish and Serve: Finish with a sprinkle of remaining sliced green onions and serve warm.

Notes

Make the sauce a day in advance and store it in the fridge for easy preparation.
