Description

A delightful fusion of savory ground pork, tender rice noodles, and fresh vegetables, offering a comforting yet adventurous meal experience.


Ingredients

  • 1 lb ground pork
  • Pinch of white or black pepper
  • 1/2 cup + 1 tablespoon low sodium gluten-free Tamari
  • 1/4 cup low sodium chicken broth or water
  • 1 tablespoon rice vinegar
  • 1 tablespoon ginger paste
  • 2 teaspoons sesame oil
  • Pinch of red chili pepper flakes (optional)
  • 8 oz stir fry rice noodles
  • 14 oz bag coleslaw mix
  • 1 bunch green onions
  • 4 cloves garlic (pressed or minced)

Instructions

  1. Prepare the pork: In a mixing bowl, add the ground pork, a pinch of pepper, and 1 tablespoon of Tamari. Mix until just combined and set aside.
  2. Create the sauce: In a small bowl, whisk together the remaining 1/2 cup Tamari, chicken broth (or water), rice vinegar, ginger paste, sesame oil, and red chili pepper flakes until well combined. Set aside.
  3. Cook the noodles: Boil water in a large pot and cook the rice noodles according to the package instructions (approximately 4-6 minutes until al dente). Drain and rinse under cold water.
  4. Sauté the pork: Heat a large wok or skillet over high heat. Add the pork mixture and break it apart with a wooden spoon as it cooks until browned evenly.
  5. Add the vegetables: Introduce the coleslaw mix and the white and light green parts of the green onions. Stir-fry for 3-4 minutes until tender.
  6. Incorporate the garlic: Stir in the minced garlic and continue cooking for 1 more minute.
  7. Combine everything: Add the drained noodles to the wok along with the sauce mixture. Stir-fry for 4-5 minutes until well combined and noodles are tender.
  8. Let it cool: Allow the dish to cool for at least 10 minutes before serving.

Notes

For a leaner option, swap ground pork for ground chicken or turkey. For a vegan version, substitute with tofu or tempeh.
