A vibrant summer salad featuring ripe peaches, creamy burrata, and savory prosciutto, complemented by fresh arugula and crunchy pistachios.
Ingredients

- 1 large peach (or 2 small peaches)
- 1 large avocado
- 2 small shallots
- 8 to 10 cups baby arugula (or spinach)
- 1/4 cup salted pistachios
- 4 slices prosciutto
- 6 oz burrata cheese (or fresh mozzarella)
- 6 medium basil leaves
- Zest from 1 lemon
- 1/4 cup lemon juice (freshly squeezed)
- 1/4 cup olive oil
- 1 tbsp maple syrup (or honey)
- 1 tbsp Dijon mustard
- 2 garlic cloves
- 1 tbsp fresh thyme
- Sea salt & ground black pepper (to taste)
Instructions
- Prep Ingredients: Wash the arugula and gently pat it dry. Slice the peaches and avocado into bite-sized pieces, and finely chop the shallots.
- Prepare Greens: In a large mixing bowl, combine the arugula and shallots. Toss gently to distribute the shallots throughout.
- Add Fruit: Gently fold in the sliced peaches and avocado, ensuring everything is intermingled without mashing the avocados.
- Prosciutto & Cheese: Tear the prosciutto into smaller pieces and nestle them throughout the salad. Cut the burrata cheese into luscious chunks or simply place it on top.
- Combine Ingredients: In a separate bowl, add the lemon juice, zest, olive oil, maple syrup (or honey), Dijon mustard, minced garlic, and fresh thyme.
- Whisk Together: Use a whisk to blend the dressing until fully incorporated and emulsified. Season with sea salt and ground black pepper, adjusting to your taste preferences.
- Dress the Salad: Just before serving, drizzle the dressing over the salad and toss everything gently, being careful not to break up the burrata too much.
- Garnish & Serve: Sprinkle the crushed pistachios and basil leaves on top for an added pop of flavor. Serve immediately and enjoy!
