Description

Ingredients

  • Fresh Spinach
  • Feta Cheese
  • Garlic
  • Lemon Juice
  • Pine Nuts
  • Olive Oil

Instructions

  1. Cook the Pasta: Fill a large pot with salted water and bring it to a boil. Add your pasta and cook according to package instructions until al dente. Save about half a cup of cooking water before draining the pasta.
  2. Sauté Garlic: In a large skillet, heat a generous splash of olive oil over medium heat. Add minced garlic and sauté for about 1–2 minutes, or until the garlic turns golden and fragrant.
  3. Add Spinach: Toss fresh spinach into the skillet. Stir often, cooking the leaves until wilted, about 3–4 minutes; you’ll notice the vibrant color deepening.
  4. Incorporate Feta: Crumble the feta cheese directly into the skillet. Stir gently until the cheese begins to melt and creates a creamy sauce that envelops the greens.
  5. Add Lemon Juice: Squeeze fresh lemon juice over the mixture and season with salt and pepper to taste. The acidity will brighten everything up!
  6. Combine Pasta and Sauce: Add the drained pasta to the skillet, tossing it together with the spinach and feta mixture. If the sauce seems too thick, add a splash of reserved pasta water until you achieve your desired creaminess.
  7. Finish with Pine Nuts: Remove the skillet from heat and sprinkle toasted pine nuts over your pasta before serving.
