- 1 cup ricotta cheese
- 1/2 cup pistachios, chopped
- 1/4 cup honey
- 1/2 teaspoon vanilla extract
- Pinch of salt
- Biscuit or phyllo dough for wrapping (optional)
Instructions
- Mix the Filling: In a large mixing bowl, combine the ricotta cheese, chopped pistachios, honey, vanilla extract, and a pinch of salt. Stir well until everything is thoroughly blended.
- Prepare the Dough (Optional): If using biscuit or phyllo dough, preheat your oven to 350°F (175°C). Roll out the dough on a lightly floured surface.
- Portion the Filling: Place a spoonful of the creamy mixture in the center of each dough circle if using.
- Seal the Bites: Fold the dough over the filling, pinching and sealing the edges well.
- Bake the Bites: Lay the sealed bites onto the prepared baking sheet. Bake for 15-20 minutes or until they turn a lovely golden brown.
- Finish with Honey: Once out of the oven, drizzle with a bit of extra honey right before serving.
Notes
Make the ricotta filling a day in advance and store in the fridge for convenience. Avoid over-mixing the ricotta to maintain a creamy texture.
