Description

A vibrant Shrimp and Avocado Bowl, capturing the essence of summer with succulent shrimp, creamy avocado, and zesty mango salsa.

Ingredients

Scale
  • 1 pound shrimp, peeled and deveined
  • 2 ripe avocados, diced
  • 1 cup cooked rice
  • 1 mango, diced
  • 1/4 red onion, finely chopped
  • 1 lime, juiced
  • 1 tablespoon chili powder
  • Salt and pepper to taste
  • Cilantro for garnish

Instructions

  1. Preheat the grill to medium-high heat. Season the shrimp with salt, pepper, and chili powder.
  2. Grill the shrimp for 2-3 minutes on each side until they turn pink and opaque.
  3. Prepare the salsa by combining diced mango, red onion, lime juice, and a pinch of salt in a mixing bowl.
  4. Assemble your bowl: Start with a scoop of cooked rice, layer on grilled shrimp, and diced avocado. Top with mango salsa and a drizzle of lime juice.
  5. Garnish with freshly chopped cilantro.

Notes

Feel free to substitute shrimp with chicken or tofu. For a different flavor profile, use quinoa or cauliflower rice.
