- 2 cups zucchini, chopped
- 2 cups tomatoes, diced

- 4 cloves garlic, minced
- 1–2 cups vegetable or chicken broth
- 1 tsp paprika
- 1 tsp Italian seasoning
- Salt and pepper to taste
- Fresh herbs (basil, cilantro, or parsley) for garnish
Instructions
- Prepare your ingredients by washing, peeling, and chopping the vegetables into uniform pieces.
- Layer the heartier vegetables at the bottom of the crockpot and the delicate items on top.
- Add abundant spices and seasoning to create depth in flavors.
- Pour in the broth or sauce to keep everything moist.
- Set the crockpot to low for 6-8 hours or high for 3-4 hours.
- Taste and adjust seasonings 30 minutes before serving.
- Serve garnished with fresh herbs or cheese.
Notes
Make-Ahead: Prepare ingredients the night before and store in the fridge. Customize by adding tropical fruits like pineapple.
