- 4 medium potatoes, peeled and diced
- 1 large onion, chopped
- 2 cloves garlic, minced
- 1 bell pepper, diced
- 2 stalks celery, diced
- 4 cups chicken or vegetable broth
- 1 cup heavy cream
- 2 tablespoons Cajun seasoning
- 1 teaspoon smoked paprika
- Salt and pepper to taste
- Chopped green onions, for garnish
- Crumbled bacon (optional), for garnish
Instructions
- Sauté the vegetables: In your large pot, pour a little oil and add the chopped onion, minced garlic, diced bell pepper, and celery. Cook over medium heat for about 5 minutes, stirring occasionally until the vegetables soften.
- Add the potatoes & spices: Toss in the diced potatoes along with the Cajun seasoning, smoked paprika, and broth. Stir to combine and bring everything to a boil.
- Simmer: Once boiling, reduce the heat and let it simmer for about 20 minutes until the potatoes are tender.
- Blend until smooth: Carefully blend the soup until it’s mostly smooth but retains some chunks. Use an immersion blender or a regular blender in batches.
- Finish with cream: Stir in the heavy cream and heat through for an additional 5 minutes. Adjust seasoning with salt and pepper as needed.
- Serve: Ladle the soup into bowls, garnishing with chopped green onions and crumbled bacon if desired.
Notes
This soup tastes even better the next day. Feel free to substitute ingredients based on your dietary preferences, and adjust the spice level to your liking.
