Description

A hearty and creamy split pea soup that provides comforting warmth on a chilly evening.


Ingredients

  • 1 cup split peas
  • 1 medium onion, chopped
  • 2 carrots, diced
  • 2 celery stalks, diced
  • 3 cloves garlic, minced
  • 6 cups vegetable broth
  • 1 bay leaf
  • 1 teaspoon thyme
  • Salt and pepper to taste

Instructions

  1. Rinse the split peas thoroughly under cold water. Set them aside.
  2. Heat a drizzle of olive oil in a large pot over medium heat. Add the chopped onion, diced carrots, and diced celery. Sauté until they soften.
  3. Introduce the minced garlic, cooking for an additional minute until fragrant.
  4. Stir in the rinsed split peas, vegetable broth, bay leaf, and thyme. Bring everything to a gentle boil.
  5. Lower the heat to a simmer. Allow to simmer for approximately 45 minutes, until the split peas soften.
  6. Remove the bay leaf and, if desired, blend the soup until smooth with an immersion blender.
  7. Season generously with salt and pepper to taste. Serve hot.

Notes

The soup can be stored in the fridge for up to a week or frozen for three months. Optionally, add greens like spinach or kale for added nutrition.
