A hearty and creamy split pea soup that provides comforting warmth on a chilly evening.
Ingredients

- 1 cup split peas
- 1 medium onion, chopped
- 2 carrots, diced
- 2 celery stalks, diced
- 3 cloves garlic, minced
- 6 cups vegetable broth
- 1 bay leaf
- 1 teaspoon thyme
- Salt and pepper to taste
Instructions
- Rinse the split peas thoroughly under cold water. Set them aside.
- Heat a drizzle of olive oil in a large pot over medium heat. Add the chopped onion, diced carrots, and diced celery. Sauté until they soften.
- Introduce the minced garlic, cooking for an additional minute until fragrant.
- Stir in the rinsed split peas, vegetable broth, bay leaf, and thyme. Bring everything to a gentle boil.
- Lower the heat to a simmer. Allow to simmer for approximately 45 minutes, until the split peas soften.
- Remove the bay leaf and, if desired, blend the soup until smooth with an immersion blender.
- Season generously with salt and pepper to taste. Serve hot.
Notes
The soup can be stored in the fridge for up to a week or frozen for three months. Optionally, add greens like spinach or kale for added nutrition.
