- 1 cup ricotta cheese
- 1 cup shredded mozzarella cheese
- 4 large eggs
- 1/2 cup milk
- 1/2 teaspoon salt

- 1/2 cup diced tomatoes
- 1/4 cup grated Parmesan cheese
Instructions
- Preheat the oven to 375°F (190°C).
- Combine ricotta cheese, eggs, milk, salt, pepper, and nutmeg in a large bowl and whisk until smooth.
- Stir in the fresh spinach and diced tomatoes, folding gently to coat.
- Pour the mixture into a greased baking dish.
- Top with shredded mozzarella and grated Parmesan cheese.
- Bake for 30-35 minutes or until golden and set.
- Let it cool for a few minutes before slicing and serving.
