Description

A creamy and flavorful brunch bake combining fresh spinach, ricotta, and melty cheeses, perfect for gatherings or cozy mornings.


Ingredients

  • 2 cups fresh spinach
  • 1 cup ricotta cheese
  • 1 cup shredded mozzarella cheese
  • 4 large eggs
  • 1/2 cup milk
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon nutmeg
  • 1/2 cup diced tomatoes
  • 1/4 cup grated Parmesan cheese

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Combine ricotta cheese, eggs, milk, salt, pepper, and nutmeg in a large bowl and whisk until smooth.
  3. Stir in the fresh spinach and diced tomatoes, folding gently to coat.
  4. Pour the mixture into a greased baking dish.
  5. Top with shredded mozzarella and grated Parmesan cheese.
  6. Bake for 30-35 minutes or until golden and set.
  7. Let it cool for a few minutes before slicing and serving.

Notes

Make-ahead tips: Prepare the mixture a day in advance and refrigerate. An air fryer cooks this bake in about 15–20 minutes.
