Delicious and comforting Strawberry Crumble Bars with a buttery oat topping and fresh strawberries.
Ingredients

- 2 cups fresh strawberries, chopped
- 1 cup rolled oats
- 1 cup all-purpose flour
- 1/2 cup brown sugar
- 1/4 cup granulated sugar
- 1/2 cup unsalted butter, melted
- 1 teaspoon vanilla extract
- 1 teaspoon baking powder
- 1/4 teaspoon salt
Instructions
- Preheat your oven to 350°F (175°C) and grease a 9×9 inch baking dish.
- Combine rolled oats, all-purpose flour, brown sugar, granulated sugar, baking powder, and salt in a medium mixing bowl.
- Add melted unsalted butter and vanilla extract, stirring until the mixture resembles coarse crumbs.
- Press half of the mixture firmly into the bottom of your prepared baking dish to create a crust.
- Layer the chopped strawberries evenly over the crust.
- Sprinkle the remaining crumble mixture on top of the strawberries.
- Bake for 25-30 minutes, or until the top is golden brown.
- Cool slightly in the pan before cutting into squares.
Notes
Store bars in an airtight container at room temperature for up to three days, or refrigerate for about a week. Wrap each bar in plastic wrap for freezing.
