Description

A delightful fusion of fresh strawberries and creamy layers, this no-bake Strawberry Eclair Cake is sure to impress everyone.


Ingredients

Scale
  • 1 box of graham crackers
  • 2 cups heavy whipping cream
  • 1 cup powdered sugar
  • 1 teaspoon vanilla extract
  • 2 cups prepared vanilla pudding
  • 2 cups fresh strawberries, sliced

Instructions

  1. Pour heavy whipping cream into a large mixing bowl. Add powdered sugar and vanilla extract. Beat on high speed until stiff peaks form—this should take around 2-3 minutes.
  2. Gently fold in the prepared vanilla pudding until well combined.
  3. Layer the bottom of a 9×13 inch baking dish with graham crackers.
  4. Spread half of the creamy vanilla mixture evenly over the graham crackers.
  5. Add a layer of sliced strawberries over the cream.
  6. Place another layer of graham crackers over the strawberries and repeat with the remaining cream mixture and strawberries.
  7. Cover with plastic wrap and refrigerate for at least 240 minutes or overnight.
  8. When ready to serve, slice into squares and enjoy chilled.

Notes

For added crunch, sprinkle crushed graham crackers on top before serving. This dessert is even better if made a day ahead.
