Description

A vibrant salad featuring smoky grilled chicken, sweet strawberries, and crunchy toasted pecans, all drizzled with a tangy vinaigrette.


Ingredients

  • 2 boneless, skinless chicken breasts
  • 2 cups mixed greens (spinach, arugula, etc.)
  • 1 cup strawberries, hulled and sliced
  • 1/2 cup pecans, toasted
  • 1/4 cup olive oil
  • 2 tablespoons apple cider vinegar
  • 1 tablespoon honey
  • Salt and pepper to taste

Instructions

  1. Preheat your grill to medium-high heat. Season the chicken breasts liberally with salt and pepper. Grill the chicken for about 6-7 minutes on each side, or until cooked through. Let it rest before slicing.
  2. Whisk together olive oil, apple cider vinegar, honey, salt, and pepper in a small bowl until smooth.
